Mansfield Record
Tucked into a small strip center in the Tom Thumb grocery store parking lot, it can be easy to miss Casa Jacaranda. But a lot of Mansfield folks have found the small restaurant, which has formed a faithful following.
On the quiet Wednesday night that we visited, we were the only ones in the place, which meant the lady behind the counter advised us on what to eat, took our order, cooked our food and delivered it to our table, all while making us feel like we were just visiting her house for dinner.
The place was brightly decorated with lots of Mexican woodwork and serapes, with heavy wood tables and chairs.

I tend to judge Mexican and Tex-Mex restaurants by their enchiladas ($10.99), and these were delicious! Stuffed with chicken, the pair of enchiladas were covered with a creamy white queso and served with rice and beans. The rice was a step above regular restaurant beans, while the rice was full of flavor.
My dining companion went for the quesabirria ($12.99), three corn tortillas filled with well-seasoned birria meat, cilantro and onion, plus beans, rice and bean broth. The house-made tortillas couldn’t contain the juicy meat that was dripping out the sides.
Since we watched the lady make our food, we know this isn’t any processed restaurant food, but made to order just for us. And the taste reflected it. The sweet lady even made a special order of tea just for me.
Breakfast is served all day, and they even have the Mexican colas.
Go for the flavorful food, but come back for the wonderful service at Casa Jacaranda.
